Wheat berries are a great compliment to almost any baked chicken dish and really help make your dish unique. They also “take” flavors very well. You will love how the whole grain berries soak up the flavor of the tart green apple, veggies, curry, and broth!
Ingredients
- 1 medium onion
- 1-2 cloves of garlic
- 1/2 Granny Smith apple
- 1 bell pepper (or a handful of min-sweet peppers)
- 1-2 T curry powder
- 1 C of soaked wheat berries
- 2.5 C of chicken broth
- 4 boneless chicken breasts
- 3 T of apricot jam

Instructions
- Dice up the onion, garlic, apple, and pepper(s)
- With a little olive oil, sautee the diced onion, garlic, and peppers until the onion becomes translucent.
- Add your diced apples and curry powder. Continue cooking for another couple of minutes.
- Add the chicken broth and soaked wheat berries to the skillet. Bring to a boil and simmer until most of the broth has been absorbed (about 20 min).
- Pour the contents of the skillet into a baking dish, top with your chicken breasts, cover, and bake for an hour at 375 degrees.
- After about 45 min, remove the dish from the oven and brush chicken with apricot jam. Return to the oven for another 15 min or until the chicken is cooked through.
After letting the dish rest for a few minutes, grab a plate and dish out some of this delicious dish with a side of garden-fresh veggies.
