These are the BEST cookies that I’ve ever made! The soft red wheat makes them nice and fluffy, while the earthy buckwheat flavor balances out the sweetness of the chocolate chunks. Two things will happen very quickly after making these delicious morsels. First, they will disappear. Seriously, I think a few just walked off the counter (possibly in cahoots with the kids and Virginia). Second, your friends and family will be begging you to make more!

Ingredients
- 3/4 C Soft red winter wheat flour
- 3/4 C Buckwheat flour
- 1/2 tsp Baking powder
- 1/2 tsp Baking soda
- 1/2 tsp Salt
- 1/2 C Butter, melted
- 2, 3oz Chocolate bars
- 2/3 C Brown sugar
- 1/2 C Granulated sugar
- 1 Egg
- 2 Egg yolks
- 1 tsp Vanilla extract

Instructions
- Start by chopping your chocolate bars. It’s OK to have some large and small pieces. They all get baked into some wonderful goodness!
- In a medium bowl, whisk together your flours, baking powder, baking soda, and salt.
- In a separate bowl, mix together the sugars and melted butter. Now mix in the egg, egg yolks, and vanilla until it forms a nice, smooth, creamy mixture.
- Combine both of your bowls to make the cookie dough. As soon as the dough comes together, add in your chocolate chunks. Chill in the refrigerator for 2-3 hours. More chill time equals yummy, yummy cookies.
- Remove from the refrigerator and scoop out cookies onto a baking sheet lined with parchment paper. Bake for 8-10 mins at 375 degrees. Do NOT overbake! The cookies should be very soft in the middle and have slightly browned edges. Cool for 10-15 minutes before transferring to a cooling rack.
