Mmmmmm…. How WE LOVE us some warm, savory, delicious, nourishing soup, especially during these long, dark days of winter where the cold sinks into the bones. This week’s recipe comes to you from Virginia, aka the self-proclaimed ‘Soup Master!’ 🙂 While coming-up with savory, yummy soups comes pretty quickly for her, naming these concoctions is another. So, you will often see her soups named after the ‘heart of the soup’ ingredients – so today’s recipe – ‘Fennel Wheat Tomato Veggie Soup.’ How creative!? This vegetable and grain soup is rich and bold enough to pair with a rich and bold Bordeaux, we just happened to have on hand (Thank YOU, Christmas)! It features Firefly Fields Organic Soft Red Winter Wheat and Raw Comb Honey. Hold onto your seats because this is just the beginning of year sure to provide lots of interesting soup recipes! NOTE: This recipe makes 6 quarts – enough to feed a small army. We typically make a bunch, and can & seal the rest to spread out over the work week for quick meals.
Ingredients:
Lots of raw ingredients, and totally worth it!
- 1/2 cup raw comb honey
- 2 cup organic soft red winter wheat
- 1.5 quarts of tomato juice
- 1, 14 oz can of diced tomatoes
- 1 whole fennel bulb, branches, leaves
- 1 head of kale
- 2 lbs of red potatoes
- 1.5 cups of slice carrots
- 3 small red onions
- 1 cup of corn
- 1 cup of peas
- tablespoon of olive oil
- 1 tablespoon of bouillon soup base
- 1 tsp of dill
- 1 tsp of garlic granules
- salt and pepper to taste

Rinse and prep your organic soft red wheat, and then place on stove top covered with excess water about 2 inches above the surface of the grains and boil on medium. Have the grains begin to cook while you prep and cut the veggies.
Round up and wash all your veggies, then cut and dice for soup. Soup is super forgiving, so you can make larger or smaller chunks depending on preference or add and/or subtract different ingredients! It’s all good – the wonderful thing about cooking this way is the raw ingredients are what matter. If the ingredients are good the soup will be good!
Starting with the onions, chop roughly into 1/2 inch squares and saute in stew pot with olive oil and a little salt (covered to let them sweat). Meanwhile, make sure when you chop up the fennel bulb you dice into similar size chunks, maybe slightly larger than onions. Keep in mind, you want your soup spoon to have multiple treats on one spoon so cut your veggies accordingly. Also, save the thin stems and leaves of the fennel on the side until the end. Once the onions have sweated and begin to brown, add the thicker portions of the fennel and carrots to the onion pot and saute together (not the fine stems and leaves of the fennel).
Meanwhile you should chop and prepare the other ingredients to be thrown into the pot and the grains should be cooking. After about 5 minutes of the onion, fennel, and carrots sauteing together, add 1 cup of water and 1 tablespoon of bouillon soup base. Let the bouillon dissolve, then add the tomato juice (we had canned this from earlier in the summer), diced tomatoes, potatoes, peas, corn, and Kale. Cover and stew on medium.
By this time, your whole grain wheat should be nearly cooked. Add 1/2 cup of raw comb honey to the grains. This allows the grains to absorb some of the honey comb flavor directly before dispersing with all the liquids in the soup pot. After you have stirred in the comb honey and cannot detect the beeswax (full of Vitamin A, by the way), shovel whole grains doused in comb honey into soup pot to stew. Add dill, garlic, salt, and pepper.
Allow soup to simmer for 15-20 minutes or longer if you prefer. Finally, add the delicate fennel leaves and stir them in throughout the soup to give it a refreshing bite. Ladle out the soup with a bread bowl or some toasty crackers. No matter how you eat this Fennel Wheat Tomato soup, it’s bound to give you some good ‘zoom, zoom’ energy filled with nourishment from the macro to micro-nutrients all bodies need!
