Back in March we featured a nice tofu recipe that was part of a soybean-focused series that we were running. If you remember this series all started with 4 C (2 lbs) of organic soybeans which resulted in 2 L of Organic Soymilk and 2+ C of okara and contributed to 10-min. This week we wanted to highlight a really delicious tofu recipe.
General Tso should be familiar to anyone who’s been to a Chinese restaurant. This sweet and spicy treat is usually made with chicken, but it also makes a delicious sauce for tofu as well. This recipe is based on one at simpleveganblog.com but with a few variations. Enjoy!
Ingredients
Tofu:
- 1 block of tofu
- 2 Tbsp soy sauce
- 1 Tbsp mirin (Substitute: ½ tsp sugar + 1 Tbsp white wine)
- 1 C flour
- 2 cloves garlic
General Tso’s Sauce:
- 3 Tbsp soy sauce
- 3 Tbsp mirin
- 2 Tbsp balsamic vinegar
- 1 Tbsp dashi miso soup stock
- 2 Tbsp water
- 3 Tbsp sugar
- 1 Tbsp tomato paste
- 3 Tbsp flour
- 1 tsp ginger powder
- 1 tsp chili flakes

Instructions
- Cube the tofu into small bite-sized chunks. Mix the soy sauce and mirin in a small bowl. Add the tofu and soy-mirin mixture to a Ziploc bag, squeezing out as much of the air as possible, and set aside for 30-60 minutes. While the tofu is marinating, preheat the oven to 350 degrees.
- After marinating, coat the tofu with flour and spread on a baking sheet. Bake for about 30-40 minutes, stirring every 5-10 minutes, until the tofu is brown and crispy on each side.
- While the tofu is baking, mix together all ingredients for General Tso’s sauce in a bowl.
- Remove the tofu from the oven. Sauté the garlic in a skillet over medium-high heat. Add General Tso’s sauce and allow the mixture to simmer in the skillet for a couple minutes stirring occasionally. The sauce should begin to thicken as you simmer and stir it.
- Add the tofu to the skillet and cook over medium heat for 3-5 minutes. Remove from heat and the mixture will thicken nicely as it cools.
Your done! Now is the perfect time to make some quick rice and veggies to enjoy with your General Tso’s Tofu.
