Cake Dealer, Stephanie Komondy is this week’s Firefly Kitchen contributor with this old fashion honey cookie throw-back that combines seven simple ingredients to take your taste buds on a journey to the southwestern Michigan countryside. Combining Stephanie’s local talent and skills as a pastry chef with our local raw honey and freshly milled organic all-purpose flour is about as close as it gets to tasting Barry County. But, don’t take it from us – taste these or bake them yourself. You can find the Cake Dealer and the Old Fashion Soft Honey Cookies this weekend at the Hastings, Michigan Farmer’s Market from 9 to 1. OR, if you’d like to try your hand at baking these yourself, Firefly Fields will be boothed next to Stephanie with a couple varieties of raw honey and freshly milled whole grain flour. Ingredients
- 1 cup (2 sticks) salted softened butter
- 1 cup brown sugar
- 2 large eggs
- ⅓ cup honey
- 1 teaspoon vanilla
- 3½ cups all purpose flour
- 1½ teaspoons baking soda

Instructions
- Preheat oven to 350 F. degrees. Grease cookie sheets.
- Cream butter and sugar together either by hand or with a mixer. Mix in eggs, vanilla, & honey.
- Add flour & baking soda & mix well.
- Drop by the heaping tablespoon full onto cookie sheets.
- Bake 10-12 minutes until they are just starting to turn golden brown.
That’s it! We love this straight-forward recipe for having few ingredients and highlighting the taste of honey. Remember, different types of honey will have different types of flavor. So have fun tinkering with different honey varietals whether it’s buckwheat or wildflower or clover or whatever you can get your hands on. Each time you use different honey you’ll get a new sensory experience. The only thing to watch out for when baking with honey is not overbrowning as honey bakes a little faster than sugar. Just pay attention to your first sheet of cookies to find the sweet spot for how long it takes your cookies to reach that perfect golden crisp. Once you’re finished, brush your delicious treats with honey for a sweet, shiny glaze after they have cooled down and enjoy.
