This meal is LOADED with nutrients and is sure to fuel you through this last part of winter. What’s even better is that it’s super easy to make, stores and reheats well as leftovers, and you will find a little bit goes a long way in terms of satisfying your appetite!
Ingredients
- 1 large onion
- 2 cloves of garlic
- 1-2 bell peppers (or a handful of min-sweet peppers)
- 1 package (14 oz) of smoked sausage
- 1 package of frozen broccoli
- 1/2 C of chicken broth
- 1/2 C of tomato sauce
- 2 C of soaked wheat berries

- Before using wheat berries in just about any recipe, I always wash and soak them for about 24 hours. This helps reduce the cooking time and makes them easier to cook with.
- Go ahead and get the soaked wheat berries cooking. You will want them simmering in your choice of stock, broth, or water for at least 30 minutes. I usually start out with a ratio of about 2 to 2.5 C of liquid to each cup of wheat berries. You can add more liquid as needed.
- The wheat berries should be soft and little chewy when fully cooked.
- Chop up the garlic and slice the smoked sausage. Place these in a large skillet with hot oil and cook until the sausage is browned nicely on both sides.
- Chop up the onion and peppers. Together with the frozen broccoli, add the veggies to the skillet and simmer for about 10 minutes.
- Finally, once the wheat berries have finished cooking, add them to the skillet along with the broth and tomato sauce and continue simmering until most of the liquid has been absorbed.
Load up a bowl, top with some cheese, and enjoy with family and friends. There will be plenty to share!
